Ingredients:
- 2 Salmon fillets (6 oz each)
- 1 large sweet potato, peeled and diced
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin powder
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 1 tablespoon chopped fresh cilantro (optional)
Instructions:
- Preheat oven to 400°F (200°C). Toss diced sweet potato with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes roast, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until softened and caramelized, about 10-15 minutes. Season with salt and pepper.
- Pat salmon fillets dry and season both sides with smoked paprika, cumin powder, cayenne pepper, salt, and pepper.
- Heat a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through and flaky.
- To serve, place a salmon fillet on each plate, top with caramelized onions and roasted sweet potatoes. Garnish with chopped cilantro (optional).
