Spiced Salmon with Roasted Sweet Potato and Caramelized Onions

A flavorful and healthy weeknight dinner featuring pan-seared salmon with a sweet and savory topping.

Ingredients:

  • 2 Salmon fillets (6 oz each)
  • 1 large sweet potato, peeled and diced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Toss diced sweet potato with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While the sweet potatoes roast, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until softened and caramelized, about 10-15 minutes. Season with salt and pepper.
  3. Pat salmon fillets dry and season both sides with smoked paprika, cumin powder, cayenne pepper, salt, and pepper.
  4. Heat a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through and flaky.
  5. To serve, place a salmon fillet on each plate, top with caramelized onions and roasted sweet potatoes. Garnish with chopped cilantro (optional).
