Spiced Salmon with Roasted Sweet Potato & Avocado Salsa

A flavorful and healthy salmon dish with a vibrant sweet potato salsa.

Ingredients:

  • 2 Salmon fillets (about 6 ounces each)
  • 1 large sweet potato, peeled and diced
  • 1 ripe avocado, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon cumin powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Toss diced sweet potato with 1 tablespoon olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender and slightly browned.

  2. While the sweet potatoes are roasting, prepare the avocado salsa. Combine diced avocado, red onion, cilantro, lime juice, cumin powder, smoked paprika, salt, and pepper in a bowl. Gently mix to combine.

  3. Season salmon fillets with salt, pepper, and your favorite spices.

  4. Place salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cooked through and flaky.

  5. Serve the baked salmon topped with the roasted sweet potato & avocado salsa.
