Spiced Salmon with Roasted Pears and Pistachios

A flavorful and elegant dish featuring pan-seared salmon, caramelized pears, and crunchy pistachios. Perfect for a special occasion or a cozy weeknight dinner.

Ingredients:

  • 2 salmon fillets (6 ounces each)
  • 1 ripe pear, cored and diced
  • 1/4 cup pistachios, roughly chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon fresh lemon juice

Instructions:

  1. Preheat oven to 400°F (200°C). Toss diced pear with 1 tablespoon olive oil, a pinch of salt, and pepper. Roast in the preheated oven for 15-20 minutes, or until softened and slightly caramelized.
  2. Season salmon fillets with cumin, paprika, cayenne pepper, salt, and pepper.
  3. Heat remaining olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through and flaky.
  4. Arrange roasted pears on a serving platter. Top with cooked salmon fillets and sprinkle with chopped pistachios. Drizzle with fresh lemon juice and serve immediately.
