Ingredients:
- 2 salmon fillets (6 ounces each)
- 1 ripe pear, cored and diced
- 1/4 cup pistachios, roughly chopped
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper to taste
- 1 tablespoon fresh lemon juice
Instructions:
- Preheat oven to 400°F (200°C). Toss diced pear with 1 tablespoon olive oil, a pinch of salt, and pepper. Roast in the preheated oven for 15-20 minutes, or until softened and slightly caramelized.
- Season salmon fillets with cumin, paprika, cayenne pepper, salt, and pepper.
- Heat remaining olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through and flaky.
- Arrange roasted pears on a serving platter. Top with cooked salmon fillets and sprinkle with chopped pistachios. Drizzle with fresh lemon juice and serve immediately.
