Spiced Salmon with Roasted Carrots and Honey-Lime Glaze

A simple yet elegant dish featuring salmon fillets glazed with a tangy honey-lime mixture and roasted alongside sweet carrots.

Ingredients:

  • 4 Salmon fillets (6 oz each)
  • 1 lb Carrots, peeled and sliced into rounds
  • 2 Tbsp Olive oil
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne pepper
  • 1/4 cup Honey
  • 2 Tbsp Lime juice
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss carrots with olive oil, paprika, cumin, cayenne pepper, salt, and black pepper. Spread on a baking sheet lined with parchment paper.
  3. Place salmon fillets on a separate baking sheet lined with parchment paper. Drizzle with lime juice and season with salt and black pepper.
  4. Roast both the salmon and carrots for 15-20 minutes, or until the salmon is cooked through and the carrots are tender.
  5. While the salmon and carrots are roasting, whisk together honey and lime juice in a small bowl.
  6. Once the salmon and carrots are roasted, remove from the oven. Drizzle the honey-lime glaze over the salmon fillets. Serve immediately.
