Ingredients:
- 4 Salmon fillets (6 oz each)
- 1 lb Carrots, peeled and sliced into rounds
- 2 Tbsp Olive oil
- 1 tsp Paprika
- 1/2 tsp Cumin
- 1/4 tsp Cayenne pepper
- 1/4 cup Honey
- 2 Tbsp Lime juice
- Salt and black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss carrots with olive oil, paprika, cumin, cayenne pepper, salt, and black pepper. Spread on a baking sheet lined with parchment paper.
- Place salmon fillets on a separate baking sheet lined with parchment paper. Drizzle with lime juice and season with salt and black pepper.
- Roast both the salmon and carrots for 15-20 minutes, or until the salmon is cooked through and the carrots are tender.
- While the salmon and carrots are roasting, whisk together honey and lime juice in a small bowl.
- Once the salmon and carrots are roasted, remove from the oven. Drizzle the honey-lime glaze over the salmon fillets. Serve immediately.
