Ingredients:
- 2 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large carrot, peeled and diced
- 1 inch fresh ginger, grated
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine olive oil, cumin, paprika, salt, and pepper. Rub the mixture over the salmon fillets.
- Place the diced carrots in a baking dish. Add the grated ginger, honey, soy sauce, and lemon juice. Toss to coat evenly.
- Bake the carrots for 15-20 minutes, or until tender.
- While the carrots are roasting, heat a large skillet over medium-high heat.
- Sear the salmon fillets in the hot skillet for 3-4 minutes per side, or until cooked through.
- Pour the roasted carrot mixture over the cooked salmon fillets and serve immediately.
