Spiced Salmon with Roasted Carrot & Ginger Glaze

A vibrant and healthy dish featuring pan-seared salmon drizzled with a sweet and spicy ginger carrot glaze. Perfect for a weeknight meal or special occasion.

Ingredients:

  • 2 salmon fillets (6 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large carrot, peeled and diced
  • 1 inch fresh ginger, grated
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, cumin, paprika, salt, and pepper. Rub the mixture over the salmon fillets.
  3. Place the diced carrots in a baking dish. Add the grated ginger, honey, soy sauce, and lemon juice. Toss to coat evenly.
  4. Bake the carrots for 15-20 minutes, or until tender.
  5. While the carrots are roasting, heat a large skillet over medium-high heat.
  6. Sear the salmon fillets in the hot skillet for 3-4 minutes per side, or until cooked through.
  7. Pour the roasted carrot mixture over the cooked salmon fillets and serve immediately.
