Spiced Salmon with Roasted Brussels Sprouts and Honey-Ginger Glaze

A quick and flavorful weeknight dinner featuring pan-seared salmon, crispy roasted Brussels sprouts, and a sweet and spicy honey-ginger glaze.

Ingredients:

  • 2 (6 ounce) salmon fillets
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1/4 teaspoon sesame oil

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. Roast in preheated oven for 20-25 minutes, or until tender and slightly browned.
  4. While Brussels sprouts are roasting, prepare the honey-ginger glaze. In a small bowl, whisk together honey, ginger, soy sauce, and sesame oil.
  5. Heat a large skillet over medium heat. Add salmon fillets to the hot skillet and cook for 3-4 minutes per side, or until cooked through.
  6. Brush glazed over cooked salmon fillets.
  7. Serve salmon with roasted Brussels sprouts and enjoy!
