Ingredients:
- 2 (6 ounce) salmon fillets
- 1 pound Brussels sprouts, trimmed and halved
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons honey
- 1 tablespoon grated fresh ginger
- 1 tablespoon soy sauce
- 1/4 teaspoon sesame oil
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast in preheated oven for 20-25 minutes, or until tender and slightly browned.
- While Brussels sprouts are roasting, prepare the honey-ginger glaze. In a small bowl, whisk together honey, ginger, soy sauce, and sesame oil.
- Heat a large skillet over medium heat. Add salmon fillets to the hot skillet and cook for 3-4 minutes per side, or until cooked through.
- Brush glazed over cooked salmon fillets.
- Serve salmon with roasted Brussels sprouts and enjoy!
