Ingredients:
- 1.5 lbs salmon fillet, skin on
- 1 large head of broccoli, cut into florets
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tsp grated ginger
- ½ tsp cumin powder
- ¼ tsp paprika
- Salt and black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Toss broccoli florets with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes until tender and slightly browned.
- In a small bowl, whisk together honey, lemon juice, ginger, cumin powder, paprika, salt, and pepper to create the glaze.
- Place salmon fillet on a separate baking sheet lined with parchment paper. Drizzle with remaining olive oil and season with salt and pepper.
- Bake salmon for 12-15 minutes, or until cooked through and flakes easily with a fork. During the last 5 minutes of cooking, brush the glaze over the salmon.
- Serve roasted broccoli alongside glazed salmon.
