Spiced Salmon with Honey-Roasted Carrots and Pistachios
Ingredients:
- 2 salmon fillets (about 6 oz each)
 - 1 lb carrots, peeled and chopped into 1-inch pieces
 - 1/4 cup olive oil
 - 2 tbsp honey
 - 1 tbsp ground cumin
 - 1 tsp paprika
 - 1/2 tsp cinnamon
 - 1/4 tsp cayenne pepper (optional)
 - Salt and black pepper to taste
 - 1/4 cup chopped pistachios
 
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
 - In a large bowl, toss the carrots with olive oil, honey, cumin, paprika, cinnamon, cayenne pepper (if using), salt, and black pepper. Spread the carrots in a single layer on the prepared baking sheet.
 - Place the salmon fillets on top of the carrots. Season the salmon with salt and pepper.
 - Roast for 15-20 minutes, or until the salmon is cooked through and the carrots are tender.
 - Garnish with chopped pistachios before serving.
