Spiced Salmon with Honey-Roasted Carrots and Pistachios

A vibrant and flavorful dish that combines juicy salmon, sweet roasted carrots, and crunchy pistachios. Perfect for a weeknight dinner or a special occasion.

Spiced Salmon with Honey-Roasted Carrots and Pistachios

Ingredients:

  • 2 salmon fillets (about 6 oz each)
  • 1 lb carrots, peeled and chopped into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup chopped pistachios

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the carrots with olive oil, honey, cumin, paprika, cinnamon, cayenne pepper (if using), salt, and black pepper. Spread the carrots in a single layer on the prepared baking sheet.
  3. Place the salmon fillets on top of the carrots. Season the salmon with salt and pepper.
  4. Roast for 15-20 minutes, or until the salmon is cooked through and the carrots are tender.
  5. Garnish with chopped pistachios before serving.
