Ingredients:
- 2 salmon fillets (about 6 ounces each)
- 1 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 1/2 cup full-fat coconut milk
- 1 tablespoon lime juice
- 1 tablespoon chopped fresh cilantro
- 1 clove garlic, minced
Instructions:
- Pat salmon fillets dry with paper towels and season both sides with salt, pepper, cumin, and cayenne pepper.
- Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through and flaky. Remove from skillet and set aside.
- In the same skillet, combine coconut milk, lime juice, cilantro, and garlic. Bring to a simmer over medium heat, stirring occasionally, until slightly thickened, about 2-3 minutes.
- Pour sauce over salmon fillets and serve immediately.
