Spiced Salmon with Coconut-Lime Salsa and Roasted Sweet Potatoes

A vibrant and healthy dish featuring succulent salmon, a zesty coconut-lime salsa, and sweet roasted potatoes.

Ingredients:

  • 4 (6 oz) salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded coconut
  • 1 lime, juiced
  • Pinch of salt

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, cumin, paprika, salt, and pepper. Rub mixture over salmon fillets.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cooked through.
  4. While the salmon is baking, toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a separate baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
  5. Meanwhile, prepare the salsa by combining red onion, cilantro, coconut, lime juice, and salt in a bowl.
  6. Serve roasted sweet potatoes topped with salmon fillets and drizzle with coconut-lime salsa.
