Ingredients:
- 4 (6 oz) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup shredded coconut
- 1 lime, juiced
- Pinch of salt
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine olive oil, cumin, paprika, salt, and pepper. Rub mixture over salmon fillets.
- Place salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cooked through.
- While the salmon is baking, toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a separate baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
- Meanwhile, prepare the salsa by combining red onion, cilantro, coconut, lime juice, and salt in a bowl.
- Serve roasted sweet potatoes topped with salmon fillets and drizzle with coconut-lime salsa.
