Ingredients:
2 salmon fillets (6 ounces each)
1 tablespoon olive oil
1 teaspoon ground ginger
1/2 teaspoon cumin
1/4 teaspoon turmeric
Salt and black pepper to taste
For the glaze:
- 1 cup coconut milk
- 1 cup shredded carrots
- 1/4 cup honey
- 1 tablespoon soy sauce
- 1 clove garlic, minced
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, combine the olive oil, ginger, cumin, turmeric, salt, and pepper. Rub the mixture evenly over the salmon fillets.
- Place the salmon fillets on the prepared baking sheet.
- In a saucepan over medium heat, combine the coconut milk, carrots, honey, soy sauce, and garlic. Bring to a simmer, stirring occasionally, until the glaze thickens slightly, about 10 minutes.
- Pour half of the glaze over the salmon fillets. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Drizzle the remaining glaze over the cooked salmon and serve immediately.
