Spiced Salmon with Coconut-Carrot Glaze

A sweet and savory salmon dish with a vibrant glaze made from coconut milk, carrots, and warming spices.

Ingredients:

  • 2 salmon fillets (6 ounces each)

  • 1 tablespoon olive oil

  • 1 teaspoon ground ginger

  • 1/2 teaspoon cumin

  • 1/4 teaspoon turmeric

  • Salt and black pepper to taste

  • For the glaze:

    • 1 cup coconut milk
    • 1 cup shredded carrots
    • 1/4 cup honey
    • 1 tablespoon soy sauce
    • 1 clove garlic, minced

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the olive oil, ginger, cumin, turmeric, salt, and pepper. Rub the mixture evenly over the salmon fillets.
  3. Place the salmon fillets on the prepared baking sheet.
  4. In a saucepan over medium heat, combine the coconut milk, carrots, honey, soy sauce, and garlic. Bring to a simmer, stirring occasionally, until the glaze thickens slightly, about 10 minutes.
  5. Pour half of the glaze over the salmon fillets. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Drizzle the remaining glaze over the cooked salmon and serve immediately.
