Ingredients:
- 4 (6 ounce) Salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- For the Salsa:
- 1 ripe avocado, diced
- 1/2 cup unsweetened shredded coconut, toasted
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- Pinch of salt
Instructions:
- Pat the salmon fillets dry and season generously with salt, black pepper, cumin, paprika, and cayenne pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes per side, or until cooked through and flaky.
- While the salmon is cooking, prepare the salsa: Combine avocado, toasted coconut, red onion, cilantro, lime juice, and salt in a bowl. Gently mix to combine.
- Serve the cooked salmon topped with the refreshing coconut-avocado salsa.
