Spiced Salmon Tacos with Mango Salsa

A vibrant and flavorful twist on traditional tacos featuring succulent spiced salmon and a sweet and tangy mango salsa.

Yields: 4 servings Prep time: 15 minutes Cook time: 10 minutes

Ingredients:

  • 1 lb salmon fillets

  • 1 tbsp olive oil

  • 1 tsp cumin powder

  • ½ tsp paprika

  • ¼ tsp cinnamon

  • Salt and black pepper to taste

  • 1 ripe mango, diced

  • ½ red onion, finely chopped

  • ½ cup chopped cilantro

  • 1 jalapeño, seeded and minced (adjust to taste)

  • 2 tbsp lime juice

  • Pinch of salt

  • 8 small corn tortillas

  • Toppings: avocado slices, shredded lettuce, sour cream (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat salmon fillets dry and season generously with olive oil, cumin, paprika, cinnamon, salt, and pepper. Place on the prepared baking sheet.
  3. Bake for 10-12 minutes, or until salmon is cooked through and flakes easily with a fork.
  4. While the salmon bakes, prepare the mango salsa. Combine diced mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl. Mix well and set aside.
  5. Warm tortillas according to package instructions.
  6. Flake cooked salmon into pieces.
  7. Fill each tortilla with flaked salmon and top with mango salsa, avocado slices, shredded lettuce, and sour cream (if desired).
