Ingredients:
1 lb salmon fillets
1 tbsp olive oil
1 tsp cumin powder
½ tsp paprika
¼ tsp cinnamon
Salt and black pepper to taste
1 ripe mango, diced
½ red onion, finely chopped
½ cup chopped cilantro
1 jalapeño, seeded and minced (adjust to taste)
2 tbsp lime juice
Pinch of salt
8 small corn tortillas
Toppings: avocado slices, shredded lettuce, sour cream (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat salmon fillets dry and season generously with olive oil, cumin, paprika, cinnamon, salt, and pepper. Place on the prepared baking sheet.
- Bake for 10-12 minutes, or until salmon is cooked through and flakes easily with a fork.
- While the salmon bakes, prepare the mango salsa. Combine diced mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl. Mix well and set aside.
- Warm tortillas according to package instructions.
- Flake cooked salmon into pieces.
- Fill each tortilla with flaked salmon and top with mango salsa, avocado slices, shredded lettuce, and sour cream (if desired).
