Spiced Salmon Patties with Mango Salsa

A zesty and flavorful twist on salmon patties, topped with a vibrant mango salsa.

Ingredients:

  • For the Patties:

    • 1 pound boneless, skinless salmon fillet, cooked and flaked
    • 1/2 cup rolled oats
    • 1/4 cup chopped cilantro
    • 1 tablespoon finely grated ginger
    • 1 teaspoon cumin powder
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon cayenne pepper (optional)
    • 1 egg, beaten
    • Salt and black pepper to taste
  • For the Mango Salsa:

    • 1 ripe mango, diced
    • 1/2 red onion, finely chopped
    • 1/4 cup chopped fresh cilantro
    • 1 jalapeño pepper, seeded and minced (adjust to taste)
    • 2 tablespoons lime juice
    • Salt and black pepper to taste

Instructions:

  1. Prepare the Patties: In a large bowl, combine the flaked salmon, oats, cilantro, ginger, cumin, paprika, cayenne pepper (if using), beaten egg, salt, and black pepper. Mix well until everything is combined.
  2. Shape the Patties: Divide the mixture into 6 equal portions and shape them into patties.
  3. Cook the Patties: Heat a tablespoon of olive oil in a large skillet over medium heat. Cook the salmon patties for 4-5 minutes per side, or until golden brown and cooked through.
  4. Make the Salsa: While the patties are cooking, combine the mango, red onion, cilantro, jalapeño, lime juice, salt, and black pepper in a bowl. Toss gently to combine.
  5. Serve: Top the cooked salmon patties with the fresh mango salsa.
