Ingredients:
- 1 lb canned salmon, drained and flaked
- 1/2 cup rolled oats
- 1/4 cup chopped cilantro
- 1/4 cup finely diced red onion
- 1 tablespoon lime juice
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large avocado, mashed
- 1 ripe mango, diced
- 1/4 cup chopped red onion
- 1 tablespoon lime juice
- 1 jalapeño pepper, finely minced (optional)
Instructions:
- In a large bowl, combine the flaked salmon, oats, cilantro, red onion, lime juice, cumin powder, paprika, garlic powder, salt, and black pepper. Mix well to combine.
- Form the mixture into 6 patties.
- Heat a tablespoon of olive oil in a skillet over medium heat. Cook the salmon patties for 3-4 minutes per side, or until golden brown and cooked through.
- While the patties are cooking, prepare the avocado mango salsa. Combine the mashed avocado, diced mango, red onion, lime juice, and jalapeño pepper (if using) in a bowl. Stir well to combine.
- Serve the salmon patties hot topped with the creamy avocado mango salsa.
