Spiced Salmon Patties with Creamy Avocado Mango Salsa

These flavorful salmon patties are packed with spices and topped with a bright and creamy avocado mango salsa for a delicious and healthy meal.

Ingredients:

  • 1 lb canned salmon, drained and flaked
  • 1/2 cup rolled oats
  • 1/4 cup chopped cilantro
  • 1/4 cup finely diced red onion
  • 1 tablespoon lime juice
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large avocado, mashed
  • 1 ripe mango, diced
  • 1/4 cup chopped red onion
  • 1 tablespoon lime juice
  • 1 jalapeño pepper, finely minced (optional)

Instructions:

  1. In a large bowl, combine the flaked salmon, oats, cilantro, red onion, lime juice, cumin powder, paprika, garlic powder, salt, and black pepper. Mix well to combine.
  2. Form the mixture into 6 patties.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Cook the salmon patties for 3-4 minutes per side, or until golden brown and cooked through.
  4. While the patties are cooking, prepare the avocado mango salsa. Combine the mashed avocado, diced mango, red onion, lime juice, and jalapeño pepper (if using) in a bowl. Stir well to combine.
  5. Serve the salmon patties hot topped with the creamy avocado mango salsa.
