Ingredients:
- 1 lb cooked salmon, flaked
- ½ cup rolled oats
- ¼ cup chopped red bell pepper
- 2 tbsp chopped fresh cilantro
- 1 tbsp grated ginger
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt and black pepper to taste
- 2 eggs, lightly beaten
For the Coconut-Lime Salsa:
- ½ cup shredded coconut (unsweetened)
- ½ cup diced red onion
- ¼ cup chopped fresh cilantro
- ¼ cup lime juice
- 1 tbsp honey
- Pinch of salt
Instructions:
- In a large bowl, combine the flaked salmon, oats, red bell pepper, cilantro, ginger, cumin, paprika, salt, and black pepper. Gently mix until well combined. Add the beaten eggs and stir until everything is evenly moistened.
- Shape the mixture into 4-6 patties.
- Heat a tablespoon of coconut oil in a large skillet over medium heat. Cook the salmon patties for about 3-4 minutes per side, or until golden brown and heated through.
- While the patties are cooking, prepare the salsa by combining all ingredients in a bowl. Mix well and set aside.
- Serve the warm salmon patties topped with generous portions of the coconut-lime salsa.
