Spiced Pumpkin & Chickpea Burgers

A delicious and vegetarian twist on classic burgers, bursting with fall flavors.

Yields: 4 servings Prep time: 20 minutes Cook time: 15 minutes

Ingredients:

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 cup cooked pumpkin puree
  • 1/2 cup rolled oats
  • 1/4 cup chopped walnuts
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste

Instructions:

  1. In a large bowl, mash the chickpeas with a fork until mostly smooth.
  2. Add the pumpkin puree, oats, walnuts, Parmesan cheese, olive oil, cumin powder, paprika, cinnamon, nutmeg, salt, and pepper. Mix well to combine.
  3. Form the mixture into 4 patties.
  4. Heat a large skillet over medium heat. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.

Serve:

  • On toasted buns with your favorite burger toppings like lettuce, tomato, onion, avocado, and a drizzle of sriracha mayo.
