Ingredients:
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 cup cooked pumpkin puree
- 1/2 cup rolled oats
- 1/4 cup chopped walnuts
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon cumin powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and black pepper to taste
Instructions:
- In a large bowl, mash the chickpeas with a fork until mostly smooth.
- Add the pumpkin puree, oats, walnuts, Parmesan cheese, olive oil, cumin powder, paprika, cinnamon, nutmeg, salt, and pepper. Mix well to combine.
- Form the mixture into 4 patties.
- Heat a large skillet over medium heat. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
Serve:
- On toasted buns with your favorite burger toppings like lettuce, tomato, onion, avocado, and a drizzle of sriracha mayo.
