Ingredients:
- 1 lb boneless pork loin, cut into 1-inch cubes
- 1 large sweet potato, peeled and diced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin powder
- 1/4 tsp cayenne pepper (optional)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 avocado, mashed
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions:
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, heat a large skillet over medium heat. Add pork cubes and cook until browned on all sides.
- Stir in smoked paprika, cumin powder, cayenne pepper (if using), salt, and pepper. Cook for 5-7 minutes, or until pork is cooked through.
- To assemble the bowls, divide roasted sweet potatoes among serving plates. Top with spiced pork, mashed avocado, and chopped cilantro. Serve immediately with lime wedges.
