Spiced Pork Tenderloin with Roasted Sweet Potatoes and Caramelized Onions
Ingredients:
- 1 pound pork tenderloin
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 1 large onion, thinly sliced
- 2 tablespoons butter
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- In a small bowl, combine olive oil, cumin, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Rub the mixture all over the pork tenderloin.
- Place the sweet potatoes in a large bowl and toss with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
- In a separate skillet over medium heat, melt the butter. Add the onions and cook, stirring occasionally, until softened and caramelized, about 15-20 minutes.
- Place the pork tenderloin on the same baking sheet with the sweet potatoes. Roast for 20-25 minutes, or until the pork reaches an internal temperature of 145 degrees F (63 degrees C).
- Serve the pork tenderloin sliced over the roasted sweet potatoes and caramelized onions.
