Ingredients:
- For the filling:
- 4 ripe but firm pears, peeled, cored and sliced
- 1/4 cup brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- For the gingerbread topping:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and diced
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9-inch baking dish.
- Make the filling: In a large bowl, combine sliced pears, brown sugar, lemon juice, cinnamon, ginger, and cloves. Toss to coat. Pour the mixture into the prepared baking dish.
- Make the topping: In a separate bowl, whisk together flour, oats, brown sugar, ginger, cinnamon, cloves, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the gingerbread topping evenly over the pear filling.
- Bake for 35-40 minutes, or until the topping is golden brown and the pears are tender.
- Let cool slightly before serving. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
