Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground ginger
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- ½ cup chopped crystallized ginger
- 1 cup diced ripe pears
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, salt, ginger, cinnamon, and cloves. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped crystallized ginger and diced pears.
- Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the blondies cool completely in the pan before cutting into squares.
