Ingredients:
For the Doughnuts:

- 1 teaspoon cardamom powder
- 1/4 teaspoon vanilla extract
Instructions:
- Make the Doughnuts: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt. In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
- Prepare the Filling: Combine diced pears, brown sugar, lemon juice, and cinnamon in a saucepan. Cook over medium heat, stirring occasionally, until pears are soft and thickened, about 10 minutes. Set aside to cool.
- Fry the Doughnuts: Heat oil in a large pot or deep fryer to 350°F (175°C). Drop spoonfuls of dough into the hot oil, frying for 2-3 minutes per side, until golden brown. Remove doughnuts with a slotted spoon and drain on paper towels.
- Assemble: While doughnuts are still warm, carefully cut a small hole in the center of each doughnut using a small knife or pastry cutter. Fill each doughnut with the pear filling.
- Make the Glaze: In a bowl, whisk together powdered sugar, milk, cardamom powder, and vanilla extract until smooth. Dip filled doughnuts into glaze, allowing excess to drip off. Place glazed doughnuts on a wire rack to set.
