Spiced Pear & Ginger Doughnuts with Cardamom Glaze

These fluffy doughnuts are packed with warming spices and a juicy pear filling, topped with a delicate cardamom glaze. Perfect for a cozy autumn morning!

Ingredients:

  • For the Doughnuts:

    • 2 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon salt
    • 1 large egg
    • 1/2 cup milk
    • 1/4 cup unsalted butter, melted
    • 1 teaspoon vanilla extract
  • For the Pear Filling:

    • 2 ripe pears, peeled and diced
    • 1/4 cup brown sugar
    • 1 tablespoon lemon juice
    • 1/4 teaspoon ground cinnamon
  • For the Cardamom Glaze:

    • 1 cup powdered sugar
    • 1/4 cup milk
    • 1 teaspoon cardamom powder
    • 1/4 teaspoon vanilla extract

Instructions:

  1. Make the Doughnuts: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt. In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
  2. Prepare the Filling: Combine diced pears, brown sugar, lemon juice, and cinnamon in a saucepan. Cook over medium heat, stirring occasionally, until pears are soft and thickened, about 10 minutes. Set aside to cool.
  3. Fry the Doughnuts: Heat oil in a large pot or deep fryer to 350°F (175°C). Drop spoonfuls of dough into the hot oil, frying for 2-3 minutes per side, until golden brown. Remove doughnuts with a slotted spoon and drain on paper towels.
  4. Assemble: While doughnuts are still warm, carefully cut a small hole in the center of each doughnut using a small knife or pastry cutter. Fill each doughnut with the pear filling.
  5. Make the Glaze: In a bowl, whisk together powdered sugar, milk, cardamom powder, and vanilla extract until smooth. Dip filled doughnuts into glaze, allowing excess to drip off. Place glazed doughnuts on a wire rack to set.
