Spiced Pear and Ginger Crumble Bars with Honeyed Yogurt Drizzle

A twist on classic crumble, these bars feature spiced pears and crystallized ginger, topped with a buttery oat crumble and finished with a tangy honeyed yogurt drizzle.

Ingredients:

  • For the base:
    • 1 ½ cups all-purpose flour
    • ½ cup rolled oats
    • ¼ cup brown sugar
    • ½ teaspoon salt
    • 6 tablespoons cold vegan butter, cubed
    • ¼ cup unsweetened applesauce
  • For the filling:
    • 2 ripe but firm pears, peeled, cored, and diced
    • ¼ cup packed light brown sugar
    • 1 tablespoon lemon juice
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon ground ginger
    • Pinch of freshly grated nutmeg
    • 1 tablespoon crystallized ginger, finely chopped
  • For the crumble topping:
    • ½ cup all-purpose flour
    • ¼ cup rolled oats
    • ¼ cup brown sugar
    • ½ teaspoon ground cinnamon
    • ¼ cup cold vegan butter, cubed
  • For the honeyed yogurt drizzle:
    • ¼ cup full-fat plain vegan yogurt
    • 1 tablespoon honey

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. Make the base: In a large bowl, whisk together flour, oats, brown sugar, and salt. Cut in the cold vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the applesauce until just combined. Press the mixture into the bottom of the prepared pan.
  3. Make the filling: In a medium bowl, combine diced pears, brown sugar, lemon juice, cinnamon, ginger, nutmeg, and crystallized ginger. Pour the pear mixture over the base in the baking pan.
  4. Make the crumble topping: In a separate bowl, combine flour, oats, brown sugar, and cinnamon. Cut in the cold vegan butter until the mixture resembles coarse crumbs. Sprinkle the crumble evenly over the pear filling.
  5. Bake: Bake for 30-35 minutes, or until the crumble is golden brown and the filling is bubbling. Let cool completely before drizzling with honeyed yogurt.
  6. Make the honeyed yogurt drizzle: In a small bowl, whisk together the vegan yogurt and honey until smooth. Drizzle over the cooled bars before serving.
