- ¼ cup cold vegan butter, cubed
- For the honeyed yogurt drizzle:
- ¼ cup full-fat plain vegan yogurt
- 1 tablespoon honey
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
- Make the base: In a large bowl, whisk together flour, oats, brown sugar, and salt. Cut in the cold vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the applesauce until just combined. Press the mixture into the bottom of the prepared pan.
- Make the filling: In a medium bowl, combine diced pears, brown sugar, lemon juice, cinnamon, ginger, nutmeg, and crystallized ginger. Pour the pear mixture over the base in the baking pan.
- Make the crumble topping: In a separate bowl, combine flour, oats, brown sugar, and cinnamon. Cut in the cold vegan butter until the mixture resembles coarse crumbs. Sprinkle the crumble evenly over the pear filling.
- Bake: Bake for 30-35 minutes, or until the crumble is golden brown and the filling is bubbling. Let cool completely before drizzling with honeyed yogurt.
- Make the honeyed yogurt drizzle: In a small bowl, whisk together the vegan yogurt and honey until smooth. Drizzle over the cooled bars before serving.
