Spiced Pear & Ginger Blondies with Honey Glaze

These blondies are a delightful twist on the classic, featuring juicy pears, warming ginger, and a sweet honey glaze. Perfect for autumn gatherings!

Ingredients:

  • For the Blondies:
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 ½ cups packed light brown sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 ¼ cups all-purpose flour
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • 1 teaspoon ground ginger
    • ½ teaspoon ground cinnamon
    • 1 cup diced ripe pears
  • For the Honey Glaze:
    • ½ cup honey
    • 2 tablespoons milk

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, salt, ginger, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the diced pears.
  4. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the blondies are baking, prepare the glaze by whisking together honey and milk in a small saucepan over low heat. Bring to a simmer, stirring constantly, until slightly thickened (about 2-3 minutes). Remove from heat.
  6. Once the blondies are baked, let cool slightly before drizzling with the honey glaze. Slice into squares and serve warm or at room temperature.
