Spiced Pear and Cranberry Crumble Bars

A delightful twist on classic crumble, these bars feature juicy pears, tart cranberries, and a warming spice blend nestled under a buttery oat crumble. Perfect for a cozy autumn afternoon.

Ingredients:

  • For the Filling:

    • 3 ripe but firm pears, peeled, cored, and diced
    • 1 cup fresh cranberries
    • 1/4 cup granulated sugar
    • 1/4 cup packed light brown sugar
    • 2 tablespoons cornstarch
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
  • For the Crumble Topping:

    • 1 cup rolled oats
    • 1/2 cup all-purpose flour
    • 1/2 cup packed light brown sugar
    • 1/4 teaspoon salt
    • 1/2 cup (1 stick) unsalted butter, chilled and diced

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking pan.
  2. In a large bowl, combine the diced pears, cranberries, granulated sugar, brown sugar, cornstarch, cinnamon, ginger, and nutmeg. Toss gently to coat.
  3. Pour the pear and cranberry mixture into the prepared baking pan.
  4. In a separate bowl, combine the oats, flour, brown sugar, and salt for the crumble topping. Cut in the chilled butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Sprinkle the crumble evenly over the pear and cranberry filling.
  6. Bake for 30-35 minutes, or until the crumble is golden brown and the filling is bubbly.
  7. Let cool completely in the pan before slicing and serving.

Optional: Serve warm with a scoop of vanilla ice cream or whipped cream.
