Spiced Pear and Cardamom Galette with Salted Honey Drizzle

Ingredients:
- For the Dough:
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ⅓ cup cold unsalted butter, diced
- ¼ cup ice water
- For the Filling:
- 6 ripe but firm pears, peeled, cored, and thinly sliced
- ½ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 tablespoon cornstarch
- 2 tablespoons lemon juice
- For the Salted Honey Drizzle:
- ¼ cup honey
- ⅛ teaspoon sea salt
Instructions:
Make the Dough: In a large bowl, whisk together flour and salt. Cut in butter using a pastry blender or two forks until mixture resembles coarse crumbs. Gradually add ice water, stirring with a fork until dough just comes together. Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
Prepare the Filling: In a large bowl, combine sliced pears, granulated sugar, brown sugar, cinnamon, cardamom, cornstarch, and lemon juice. Toss to coat evenly. Set aside.
Assemble the Galette: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper. Arrange pear filling in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as needed. Brush edges of dough with milk or egg wash for a golden finish.
Bake: Bake for 45 minutes, or until crust is golden brown and filling is bubbly. Let cool slightly on baking sheet before drizzling with salted honey.
Make the Salted Honey Drizzle: In a small saucepan over low heat, combine honey and sea salt. Stir until salt dissolves. Drizzle over cooled galette and serve warm.
