Ingredients:
For the crust:
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup (1 stick) vegan butter, chilled and cubed
- ¼ cup ice water
For the filling:
- 4 ripe but firm pears, peeled, cored, and sliced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cardamom
- ½ teaspoon ground cinnamon
- 1 tablespoon lemon juice
- Pinch of salt
For the honey glaze:
- ¼ cup honey
- 1 tablespoon water
- 1 teaspoon lemon juice
Instructions:
Make the crust: Combine flour and salt in a large bowl. Add the cubed butter and use your fingertips or a pastry blender to work the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, mixing with a fork until the dough just comes together. Do not overmix. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the filling: In a bowl, toss the sliced pears with sugar, cardamom, cinnamon, lemon juice, and salt. Set aside.
Assemble the galette: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper. Arrange the pear filling in the center of the dough, leaving about a 2-inch border. Fold the edges of the dough over the filling, pleating as you go to create a rustic edge.
Bake: Bake for 35-40 minutes, or until the crust is golden brown and the filling is tender.
Make the glaze: While the galette bakes, combine honey, water, and lemon juice in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, until slightly thickened (about 2-3 minutes).
Glaze and serve: Remove the galette from the oven and brush it generously with the warm honey glaze. Let cool slightly before serving. Enjoy warm or at room temperature.
