Spiced Pear and Almond Scones with Cardamom Honey Glaze
Yields: 8 scones Prep time: 20 minutes Cook time: 15-20 minutes
Ingredients:
For the scones:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup unsalted butter, chilled and cubed
- 1/2 cup milk
- 1 large egg, beaten
- 1 cup diced ripe pears, peeled
- 1/2 cup sliced almonds
For the cardamom honey glaze:
- 1/2 cup honey
- 1 tablespoon water
- 1/4 teaspoon ground cardamom
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in the cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
- Stir in milk and egg until just combined. Fold in diced pears and sliced almonds.
- Turn dough out onto a lightly floured surface and knead gently for 1-2 minutes. Pat dough into a 1-inch thick circle. Use a sharp knife or biscuit cutter to cut scones into 8 wedges.
- Place scones on prepared baking sheet, leaving about 1 inch between each scone. Bake for 15-20 minutes, or until golden brown and cooked through.
- While scones bake, prepare the glaze by combining honey, water, and cardamom in a small saucepan over low heat. Whisk until smooth and heated through.
- Drizzle warm glaze over baked scones and serve immediately.
