Spiced Pear and Almond Scones with Cardamom Honey Glaze

Spiced Pear and Almond Scones with Cardamom Honey Glaze

Yields: 8 scones Prep time: 20 minutes Cook time: 15-20 minutes

Ingredients:

  • For the scones:

    • 2 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 cup unsalted butter, chilled and cubed
    • 1/2 cup milk
    • 1 large egg, beaten
    • 1 cup diced ripe pears, peeled
    • 1/2 cup sliced almonds
  • For the cardamom honey glaze:

    • 1/2 cup honey
    • 1 tablespoon water
    • 1/4 teaspoon ground cardamom

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in the cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
  3. Stir in milk and egg until just combined. Fold in diced pears and sliced almonds.
  4. Turn dough out onto a lightly floured surface and knead gently for 1-2 minutes. Pat dough into a 1-inch thick circle. Use a sharp knife or biscuit cutter to cut scones into 8 wedges.
  5. Place scones on prepared baking sheet, leaving about 1 inch between each scone. Bake for 15-20 minutes, or until golden brown and cooked through.
  6. While scones bake, prepare the glaze by combining honey, water, and cardamom in a small saucepan over low heat. Whisk until smooth and heated through.
  7. Drizzle warm glaze over baked scones and serve immediately.
