Spiced Pear and Almond Crumble Bars

A twist on classic crumble bars, these feature juicy pears spiced with cinnamon and nutmeg, topped with a buttery almond streusel. Perfect for a cozy autumn treat!

Ingredients:

  • For the Filling:

    • 3 ripe but firm pears, peeled, cored, and thinly sliced
    • 1/4 cup brown sugar
    • 1 tablespoon lemon juice
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • Pinch of salt
  • For the Almond Streusel:

    • 1 cup almond flour
    • 1/2 cup rolled oats
    • 1/4 cup brown sugar
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 1/2 cup vegan butter, chilled and cubed

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine the sliced pears, brown sugar, lemon juice, cinnamon, nutmeg, and salt. Toss gently to coat. Pour the pear mixture into the prepared baking pan.
  3. In a separate bowl, combine the almond flour, oats, brown sugar, cinnamon, and salt. Cut in the chilled vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Sprinkle the almond streusel evenly over the pear filling.
  5. Bake for 30-35 minutes, or until the crumble topping is golden brown and the pears are tender.
  6. Let cool completely in the pan before cutting into squares and serving.
