Ingredients:
For the Filling:
- 3 ripe but firm pears, peeled, cored, and thinly sliced
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Pinch of salt
For the Almond Streusel:
- 1 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup vegan butter, chilled and cubed
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, combine the sliced pears, brown sugar, lemon juice, cinnamon, nutmeg, and salt. Toss gently to coat. Pour the pear mixture into the prepared baking pan.
- In a separate bowl, combine the almond flour, oats, brown sugar, cinnamon, and salt. Cut in the chilled vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the almond streusel evenly over the pear filling.
- Bake for 30-35 minutes, or until the crumble topping is golden brown and the pears are tender.
- Let cool completely in the pan before cutting into squares and serving.
