Ingredients:
For the Filling:
- 2 ripe mangoes, peeled and diced
- 1/4 cup brown sugar
- 1 tablespoon lime juice
- 1 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- Pinch of salt
For the Crumble Topping:
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 6 tablespoons vegan butter, chilled and diced
Instructions:
- Preheat oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- Combine the diced mangoes, brown sugar, lime juice, cardamom, ginger, and salt in a bowl. Mix well.
- Pour the mango mixture into the prepared baking pan and spread evenly.
- In a separate bowl, combine the oats, almond flour, brown sugar, cinnamon, and salt for the crumble topping. Add the diced vegan butter and use your fingers to rub it into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the mango filling.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool completely in the pan before slicing and serving. Enjoy warm or at room temperature.
