Ingredients:
- 1 lb medium shrimp, peeled and deveined
- 1/4 cup coconut milk
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 wooden skewers, soaked in water for 30 minutes
For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped cilantro
- 1 jalapeño pepper, seeded and minced (adjust to taste)
- 2 tablespoons lime juice
- Salt and black pepper to taste
Instructions:
In a medium bowl, whisk together coconut milk, curry powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper. Add shrimp and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
Thread marinated shrimp onto skewers.
Preheat grill or grill pan over medium-high heat.
Grill skewers for 2-3 minutes per side, until shrimp are pink and cooked through.
While shrimp is grilling, combine all salsa ingredients in a bowl and season with salt and pepper to taste.
Serve grilled shrimp skewers immediately topped with mango salsa.
