Spiced Coconut Shrimp Skewers with Mango Salsa

Sweet, savory, and bursting with tropical flavors! These shrimp skewers are perfect for a summer barbecue or a light weeknight dinner.

Ingredients:

  • 1 lb medium shrimp, peeled and deveined
  • 1/4 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 wooden skewers, soaked in water for 30 minutes

For the Mango Salsa:

  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 jalapeño pepper, seeded and minced (adjust to taste)
  • 2 tablespoons lime juice
  • Salt and black pepper to taste

Instructions:

  1. In a medium bowl, whisk together coconut milk, curry powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper. Add shrimp and marinate for at least 30 minutes or up to 2 hours in the refrigerator.

  2. Thread marinated shrimp onto skewers.

  3. Preheat grill or grill pan over medium-high heat.

  4. Grill skewers for 2-3 minutes per side, until shrimp are pink and cooked through.

  5. While shrimp is grilling, combine all salsa ingredients in a bowl and season with salt and pepper to taste.

  6. Serve grilled shrimp skewers immediately topped with mango salsa.
