Ingredients:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 lime, juiced
1 orange, juiced
1 tablespoon honey
1 teaspoon ground cumin
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional)
Salt and black pepper to taste
1 ripe avocado, diced
1 ripe mango, diced
½ red onion, finely chopped
¼ cup chopped fresh cilantro
2 tablespoons lime juice
1 jalapeño pepper, seeded and minced (optional)
Instructions:
- In a medium bowl, whisk together the olive oil, lime juice, orange juice, honey, cumin, paprika, cayenne pepper (if using), salt, and black pepper. Add the shrimp and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Preheat your grill to medium-high heat. Thread the marinated shrimp onto skewers.
- Grill the shrimp for 2-3 minutes per side, or until they are pink and cooked through.
- While the shrimp are grilling, prepare the avocado-mango salsa. In a bowl, combine the diced avocado, mango, red onion, cilantro, lime juice, and jalapeño (if using). Season with salt and black pepper to taste.
- Serve the grilled shrimp skewers hot, topped with the refreshing avocado-mango salsa.
