Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 ripe mango, diced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1 jalapeño pepper, seeded and minced (optional)
For the Avocado Dressing:
- 1 ripe avocado, mashed
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon water
- 1 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
In a large bowl, combine the chickpeas, mango, red onion, cilantro, and jalapeño (if using).
To make the dressing, whisk together the mashed avocado, lime juice, olive oil, water, cumin powder, salt, and pepper in a small bowl until smooth.
Pour the dressing over the salad and toss to coat.
Serve immediately or chill for later.
