Spiced Chickpea & Coconut Curry Bowls with Roasted Sweet Potatoes

A flavorful and hearty vegetarian curry bowl featuring roasted sweet potatoes, spiced chickpeas, creamy coconut milk, and fresh cilantro.

Yields: 4 servings Prep Time: 15 minutes Cook Time: 30 minutes

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, cumin, turmeric, cayenne pepper (if using), salt, and black pepper. Spread in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and slightly browned.

  2. While the sweet potatoes are roasting, heat a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.

  3. Add diced tomatoes, chickpeas, coconut milk, and curry powder to the skillet. Bring to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.

  4. Season with salt and black pepper to taste. Stir in fresh cilantro.

  5. To assemble bowls, divide roasted sweet potatoes among four serving bowls. Top with chickpea curry sauce. Serve warm.
