Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 large apple, cored and diced
- 1/2 cup walnuts, toasted
- 1/4 cup chopped red onion
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
Instructions:
In a large bowl, combine the chickpeas, apple, walnuts, red onion, and cilantro.
In a small bowl, whisk together the olive oil, cumin powder, paprika, cayenne pepper (if using), salt, and black pepper.
Pour the dressing over the salad and toss to coat evenly.
Serve immediately or chill for later.
