Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 large apple, cored and diced
- 1/2 cup walnuts, toasted
- 1/4 cup chopped red onion
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- In a large bowl, combine the chickpeas, apple, walnuts, red onion, and cilantro. 
- In a small bowl, whisk together the olive oil, cumin powder, paprika, cayenne pepper (if using), salt, and black pepper. 
- Pour the dressing over the salad and toss to coat evenly. 
- Serve immediately or chill for later.
