Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp paprika
- ¼ tsp cayenne pepper (optional)
- 1 cup grated carrots
- ½ cup unsweetened coconut milk
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, combine olive oil, cumin, coriander, paprika, cayenne pepper (if using), salt, and black pepper.
Place salmon fillets on the prepared baking sheet and rub the spice mixture evenly over both sides.
Arrange grated carrots around the salmon fillets. Pour coconut milk and lemon juice over the carrots.
Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
Garnish with fresh cilantro and serve immediately with your favorite side dish.
