Sopes de Chorizo con Frijoles y Queso
Ingredients
- 2 cups of masa harina
- 1/2 cup of warm water
- Vegetable oil for frying
- 1 pound chorizo, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup cooked frijoles (pinto beans)
- 1 cup shredded Oaxaca cheese
- Chopped cilantro for garnish
Instructions
To Make the Sopes
- In a large mixing bowl, combine masa harina and warm water.
- Mix until dough comes together.
- Knead for 5 minutes.
- Divide dough into 8 equal pieces.
- Roll each piece into a ball and then flatten slightly into disks.
To Fry the Sopes
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
- Fry the sopes for 30-40 seconds on each side, until crispy and golden brown.
- Remove from oil and set aside.
To Prepare the Toppings
- In the same skillet, cook chorizo over medium-high heat, breaking it up with a spoon as it cooks.
- Add diced onion and minced garlic to the skillet and cook until softened.
- Stir in cooked frijoles and cook for 2-3 minutes.
To Assemble the Sopes
- Place a fried sop on each plate.
- Top each sop with a spoonful of the chorizo mixture, followed by shredded cheese.
- Garnish with chopped cilantro.
