Sopes de Chorizo con Frijoles y Queso

A delicious Mexican dish featuring crispy sopes topped with spicy chorizo, creamy beans, and melted cheese.

Sopes de Chorizo con Frijoles y Queso

Ingredients

  • 2 cups of masa harina
  • 1/2 cup of warm water
  • Vegetable oil for frying
  • 1 pound chorizo, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked frijoles (pinto beans)
  • 1 cup shredded Oaxaca cheese
  • Chopped cilantro for garnish

Instructions

To Make the Sopes

  1. In a large mixing bowl, combine masa harina and warm water.
  2. Mix until dough comes together.
  3. Knead for 5 minutes.
  4. Divide dough into 8 equal pieces.
  5. Roll each piece into a ball and then flatten slightly into disks.

To Fry the Sopes

  1. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
  2. Fry the sopes for 30-40 seconds on each side, until crispy and golden brown.
  3. Remove from oil and set aside.

To Prepare the Toppings

  1. In the same skillet, cook chorizo over medium-high heat, breaking it up with a spoon as it cooks.
  2. Add diced onion and minced garlic to the skillet and cook until softened.
  3. Stir in cooked frijoles and cook for 2-3 minutes.

To Assemble the Sopes

  1. Place a fried sop on each plate.
  2. Top each sop with a spoonful of the chorizo mixture, followed by shredded cheese.
  3. Garnish with chopped cilantro.
