Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Pinch of salt
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, heat a tablespoon of olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Season with salt and pepper to taste.
- In a small bowl, whisk together cilantro, lime juice, olive oil, minced garlic, and a pinch of salt.
- Divide roasted sweet potatoes among four bowls. Top with shrimp and drizzle generously with the cilantro-lime dressing. Serve immediately.
