Smoky Shrimp and Sweet Potato Bowls with Cilantro-Lime Dressing

A vibrant and healthy meal featuring smoky shrimp, roasted sweet potatoes, and a zesty cilantro-lime dressing.

Yields: 4 servings Prep time: 15 minutes Cook time: 25 minutes

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Pinch of salt

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While the sweet potatoes are roasting, heat a tablespoon of olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Season with salt and pepper to taste.
  3. In a small bowl, whisk together cilantro, lime juice, olive oil, minced garlic, and a pinch of salt.
  4. Divide roasted sweet potatoes among four bowls. Top with shrimp and drizzle generously with the cilantro-lime dressing. Serve immediately.
