Smoky Shrimp Tacos with Mango Salsa

A vibrant and flavorful twist on classic tacos, featuring smoky shrimp, a refreshing mango salsa, and a hint of cilantro lime magic.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin
  • Salt and black pepper to taste
  • 8 small corn tortillas
  • For the Mango Salsa:
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (adjust to taste)
  • 2 tbsp lime juice
  • Pinch of salt

Instructions:

  1. Prepare the shrimp: In a bowl, toss shrimp with olive oil, smoked paprika, cumin, salt, and pepper.
  2. Cook the shrimp: Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Set aside.
  3. Make the mango salsa: Combine diced mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl. Gently stir to combine.
  4. Warm the tortillas: Heat tortillas in a dry skillet over medium heat for 30 seconds per side, or until warmed through.
  5. Assemble tacos: Fill each tortilla with shrimp and top generously with mango salsa. Serve immediately.
