Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
- Salt and black pepper to taste
- 8 small corn tortillas
- For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded and minced (adjust to taste)
- 2 tbsp lime juice
- Pinch of salt
Instructions:
- Prepare the shrimp: In a bowl, toss shrimp with olive oil, smoked paprika, cumin, salt, and pepper.
- Cook the shrimp: Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Set aside.
- Make the mango salsa: Combine diced mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl. Gently stir to combine.
- Warm the tortillas: Heat tortillas in a dry skillet over medium heat for 30 seconds per side, or until warmed through.
- Assemble tacos: Fill each tortilla with shrimp and top generously with mango salsa. Serve immediately.
