Ingredients:
- 4 oz smoked salmon, thinly sliced
- 2 medium zucchinis, spiralized
- 1/4 cup chopped fresh dill
- 1/4 cup heavy cream
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions:
- In a small bowl, combine the chopped dill, heavy cream, and lemon juice. Season with salt and pepper to taste. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the zucchini noodles and cook for 3-4 minutes, or until slightly softened.
- Divide the zucchini noodles between two plates. Top with smoked salmon slices.
- Drizzle the creamy dill sauce over the salmon and zucchini noodles. Serve immediately.
