Smoky Salmon & Walnut Pesto Pasta with Roasted Garlic

This dish is a symphony of savory and smoky flavors! The roasted garlic pesto pairs perfectly with the delicate salmon and crunchy walnuts.

Ingredients:

  • 1 pound linguine pasta
  • 1 pound smoked salmon, thinly sliced
  • 1 head of garlic
  • 1/2 cup walnuts, toasted and roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Roast the garlic: Preheat oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 40 minutes or until soft. Once cool enough to handle, squeeze the roasted cloves out of their skins.
  2. Make the pesto: Combine the roasted garlic, walnuts, parsley, Parmesan cheese, olive oil, salt, and pepper in a food processor and blend until smooth. Add more olive oil for a thinner consistency if desired.
  3. Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions. Drain and set aside.
  4. Assemble the dish: Toss the cooked pasta with the pesto. Arrange the smoked salmon on top of the pasta and serve immediately with lemon wedges for squeezing over.
