Smoky Salmon & Sweet Potato Bowls with Creamy Avocado Dressing

A vibrant and healthy meal featuring smoky salmon, roasted sweet potatoes, and a creamy avocado dressing. Packed with flavor and nutrients!

Ingredients:

  • 1 lb salmon fillet, skin on
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • For the Avocado Dressing:
    • 1 ripe avocado, mashed
    • 1/4 cup fresh cilantro, chopped
    • 2 tbsp lime juice
    • 1 tbsp olive oil
    • 1 clove garlic, minced
    • 1/4 tsp salt

Instructions:

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread in a single layer on a baking sheet.
  2. Place salmon fillet on the same baking sheet, skin side down. Season with salt and pepper.
  3. Roast for 15-20 minutes, or until sweet potatoes are tender and salmon is cooked through.
  4. While roasting, prepare the avocado dressing by combining all ingredients in a bowl and whisking until smooth. Add more lime juice or water to achieve desired consistency.
  5. To serve, divide roasted sweet potatoes and flaked salmon between bowls. Drizzle with avocado dressing and garnish with fresh cilantro.
