Ingredients:
- 1 lb salmon fillet, skin on
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
- Salt and pepper to taste
- For the Avocado Dressing:
- 1 ripe avocado, mashed
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/4 tsp salt
Instructions:
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread in a single layer on a baking sheet.
- Place salmon fillet on the same baking sheet, skin side down. Season with salt and pepper.
- Roast for 15-20 minutes, or until sweet potatoes are tender and salmon is cooked through.
- While roasting, prepare the avocado dressing by combining all ingredients in a bowl and whisking until smooth. Add more lime juice or water to achieve desired consistency.
- To serve, divide roasted sweet potatoes and flaked salmon between bowls. Drizzle with avocado dressing and garnish with fresh cilantro.
