Ingredients:
- 1 pound boneless, skinless salmon fillet, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 5 ounces fresh spinach
- 1/4 cup dry white wine
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon and cook for 3-4 minutes per side, or until cooked through. Remove the salmon from the skillet and set aside.
- Add the onion and garlic to the skillet and cook for 2-3 minutes, or until softened. Stir in the spinach and cook for 1-2 minutes, or until wilted.
- Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 1 minute. Season with salt and pepper to taste.
- Return the salmon to the skillet and heat through. Serve immediately.
