Smoky Salmon & Spinach Skillet

A quick and flavorful weeknight dinner featuring smoked salmon, fresh spinach, and a hint of lemon.

Ingredients:

  • 1 pound boneless, skinless salmon fillet, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1/4 cup dry white wine
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the salmon and cook for 3-4 minutes per side, or until cooked through. Remove the salmon from the skillet and set aside.
  2. Add the onion and garlic to the skillet and cook for 2-3 minutes, or until softened. Stir in the spinach and cook for 1-2 minutes, or until wilted.
  3. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 1 minute. Season with salt and pepper to taste.
  4. Return the salmon to the skillet and heat through. Serve immediately.
