Smoky Salmon & Roasted Sweet Potato Bowls

A quick and healthy dinner with a touch of smoky flavor.

Ingredients:

  • 1 lb salmon fillet, skin on
  • 1 large sweet potato, peeled and cubed
  • 1 red bell pepper, chopped
  • 1/2 red onion, diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin powder
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potato, bell pepper, and red onion with olive oil, smoked paprika, cumin powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While vegetables are roasting, pat salmon dry and season with salt and pepper. Place skin-side down on a separate baking sheet lined with parchment paper. Roast for 12-15 minutes, or until cooked through and flaky.
  3. To serve, divide roasted vegetables among bowls. Top with flaked salmon and garnish with fresh cilantro. Serve with lime wedges.
