Ingredients:
- 1 lb salmon fillet, skin on
- 1 large sweet potato, peeled and cubed
- 1 red bell pepper, chopped
- 1/2 red onion, diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin powder
- Salt and black pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potato, bell pepper, and red onion with olive oil, smoked paprika, cumin powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- While vegetables are roasting, pat salmon dry and season with salt and pepper. Place skin-side down on a separate baking sheet lined with parchment paper. Roast for 12-15 minutes, or until cooked through and flaky.
- To serve, divide roasted vegetables among bowls. Top with flaked salmon and garnish with fresh cilantro. Serve with lime wedges.
