Ingredients:
- 1 lb salmon fillet, cut into 1-inch cubes
- 4 ripe peaches, halved and pitted
- 1 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- For the glaze:
- ¼ cup honey
- 2 tbsp lime juice
- 1 tbsp chopped fresh cilantro
Instructions:
- Preheat grill to medium-high heat.
- In a bowl, toss salmon, peaches, and onion with olive oil, smoked paprika, salt, and pepper.
- Thread salmon, peaches, and onion onto skewers, alternating ingredients.
- Grill skewers for 5-7 minutes per side, or until salmon is cooked through and peaches are tender.
- While skewers are grilling, whisk together honey, lime juice, and cilantro in a small bowl to make the glaze.
- Brush grilled skewers with honey-lime glaze before serving.
