Smoky Salmon & Roasted Peach Skewers with Honey-Lime Glaze

A sweet and smoky twist on traditional grilled salmon, featuring juicy roasted peaches and a tangy honey-lime glaze.

Ingredients:

  • 1 lb salmon fillet, cut into 1-inch cubes
  • 4 ripe peaches, halved and pitted
  • 1 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • For the glaze:
    • ¼ cup honey
    • 2 tbsp lime juice
    • 1 tbsp chopped fresh cilantro

Instructions:

  1. Preheat grill to medium-high heat.
  2. In a bowl, toss salmon, peaches, and onion with olive oil, smoked paprika, salt, and pepper.
  3. Thread salmon, peaches, and onion onto skewers, alternating ingredients.
  4. Grill skewers for 5-7 minutes per side, or until salmon is cooked through and peaches are tender.
  5. While skewers are grilling, whisk together honey, lime juice, and cilantro in a small bowl to make the glaze.
  6. Brush grilled skewers with honey-lime glaze before serving.
