Ingredients:
- 1 lb boneless, skinless salmon fillet, cut into 1-inch cubes
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced (optional)
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and black pepper to taste
For the Cilantro Lime Crema:
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped fresh cilantro
- 2 tbsp lime juice
- 1 clove garlic, minced
- Pinch of salt
Instructions:
- In a bowl, combine the diced mango, red onion, cilantro, jalapeno (if using), lime juice, olive oil, salt, and pepper. Gently toss to coat. Set aside.
- Thread the salmon cubes onto skewers, alternating with pieces of the mango salsa.
- In a separate bowl, whisk together the yogurt, cilantro, lime juice, garlic, and salt. Refrigerate until ready to serve.
- Grill or pan-sear the salmon skewers over medium heat for 3-4 minutes per side, or until cooked through.
- Serve the skewers immediately, topped with a dollop of cilantro lime crema.
