Smoky Salmon & Mango Salsa Skewers with Cilantro Lime Crema

A vibrant and flavorful summer dish featuring succulent salmon, sweet mango salsa, and a creamy cilantro lime sauce.

Ingredients:

  • 1 lb boneless, skinless salmon fillet, cut into 1-inch cubes
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno pepper, seeded and minced (optional)
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste

For the Cilantro Lime Crema:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • Pinch of salt

Instructions:

  1. In a bowl, combine the diced mango, red onion, cilantro, jalapeno (if using), lime juice, olive oil, salt, and pepper. Gently toss to coat. Set aside.
  2. Thread the salmon cubes onto skewers, alternating with pieces of the mango salsa.
  3. In a separate bowl, whisk together the yogurt, cilantro, lime juice, garlic, and salt. Refrigerate until ready to serve.
  4. Grill or pan-sear the salmon skewers over medium heat for 3-4 minutes per side, or until cooked through.
  5. Serve the skewers immediately, topped with a dollop of cilantro lime crema.
