Smoky Salmon & Avocado Boats

A light and flavorful dish featuring grilled salmon, creamy avocado, and a hint of smoky spice.

Ingredients:

  • 2 Salmon fillets (about 6 ounces each)
  • 1 ripe Avocado, diced
  • 1/4 cup finely chopped Red Onion
  • 1 tbsp Cilantro, chopped
  • 1 Lime, juiced
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • Salt and Black Pepper to taste

Instructions:

  1. Preheat your grill or broiler to medium-high heat. Season salmon fillets with smoked paprika, garlic powder, salt, and pepper.
  2. Grill the salmon for 4-5 minutes per side, or until cooked through.
  3. While the salmon grills, prepare the avocado filling. In a bowl, combine diced avocado, red onion, cilantro, lime juice, salt, and pepper. Mix well.
  4. Carefully remove the skin from the grilled salmon fillets. Gently scoop out some of the flesh to create a "boat" shape.
  5. Fill the salmon boats with the avocado mixture. Serve immediately and enjoy!
