Ingredients:
- 2 Salmon fillets (about 6 ounces each)
- 1 ripe Avocado, diced
- 1/4 cup finely chopped Red Onion
- 1 tbsp Cilantro, chopped
- 1 Lime, juiced
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- Salt and Black Pepper to taste
Instructions:
- Preheat your grill or broiler to medium-high heat. Season salmon fillets with smoked paprika, garlic powder, salt, and pepper.
- Grill the salmon for 4-5 minutes per side, or until cooked through.
- While the salmon grills, prepare the avocado filling. In a bowl, combine diced avocado, red onion, cilantro, lime juice, salt, and pepper. Mix well.
- Carefully remove the skin from the grilled salmon fillets. Gently scoop out some of the flesh to create a "boat" shape.
- Fill the salmon boats with the avocado mixture. Serve immediately and enjoy!
