Smoky Paprika Chicken & Roasted Sweet Potato Bowls

A quick and flavorful weeknight dinner featuring smoky paprika chicken and sweet roasted potatoes. Topped with creamy avocado and fresh cilantro, this bowl is both satisfying and healthy.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 large sweet potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 ripe avocado, mashed
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes, red bell pepper, and onion with olive oil, paprika, cumin, salt, and pepper on a large baking sheet.
  2. Spread chicken cubes evenly on the same baking sheet. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  3. Serve chicken and roasted vegetables over rice or quinoa. Top with mashed avocado and fresh cilantro.
