Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 large sweet potatoes, peeled and cubed
- 1 red bell pepper, chopped
- 1 small onion, chopped
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 ripe avocado, mashed
- 1/4 cup chopped fresh cilantro
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potatoes, red bell pepper, and onion with olive oil, paprika, cumin, salt, and pepper on a large baking sheet.
- Spread chicken cubes evenly on the same baking sheet. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Serve chicken and roasted vegetables over rice or quinoa. Top with mashed avocado and fresh cilantro.
