Ingredients:
- 1 lb salmon fillet, skin removed and cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 lemon, zested and juiced
- 1/4 cup chopped cilantro
- Skewers (soaked in water for 30 minutes)
Instructions:
- In a bowl, whisk together soy sauce, honey, ginger, rice vinegar, sesame oil, lemon zest, and juice.
- Add salmon cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat grill to medium-high heat.
- Thread marinated salmon onto skewers. Grill for 3-4 minutes per side, or until cooked through and slightly charred.
- Garnish with fresh cilantro and serve immediately.
