Smoked Pineapple-Ginger Fizz
Ingredients
- 2 oz Mezcal
- 1 oz Fresh Lime Juice
- 1/2 oz Gingersnap Syrup (see below)
- 1/2 oz Honey Syrup (see below)
- 1/4 oz Ancho Reyes Liqueur
- 3-4 slices of smoked pineapple, for garnish
- Ice
- Lime wheel, for garnish
Gingersnap Syrup
- 1 cup Water
- 1 cup Brown Sugar
- 6-8 whole cloves
- 2 inches piece of fresh ginger, peeled and sliced
Honey Syrup
- 1 cup Water
- 1 cup Honey
Instructions
- Make the Gingersnap Syrup: In a medium saucepan, combine water, brown sugar, cloves, and ginger. Heat over medium heat, stirring until sugar is dissolved.
- Strain and Cool: Strain syrup into a clean glass bottle. Let cool to room temperature.
- Make the Honey Syrup: Combine equal parts honey and water in a small saucepan. Heat over low heat, stirring until honey dissolves.
- Shake and Strain: Fill a cocktail shaker with ice. Add mezcal, lime juice, gingersnap syrup, honey syrup, and Ancho Reyes liqueur. Shake vigorously for 10-12 seconds to combine and chill ingredients.
- Garnish and Serve: Strain into a chilled glass filled with ice. Garnish with smoked pineapple slices and a lime wheel.
Note: To make smoked pineapple, grill or caramelize fresh pineapple slices over low heat until slightly charred. Let cool completely before using.
